Our King Salmon grow slowly in New Zealand’s southern-most waters, developing vibrant orange flesh and a distinctive and rich flavour profile, with a tender and melt-in-your-mouth texture.

Among the highest ranking ingredients we came across was Big Glory Bay Salmon. Their quality is always fresh and pristine, the texture and color is amazing but more importantly, the story of BGB salmon is one that needs to be heard across the world.
The pristine environment of Big Glory Bay gives the king salmon a sweet, clean flavor with a hint of kombu. When grilled, I love the contrast between the thin, crispy skin and the tender, flaky texture of the fish. Big Glory Bay is one of the most beautiful and peaceful places I have ever visited.
